Calcium Propionate
Calcium Propionate is used as a preservative. It prevents mold and bacterial growth that would
cause products to go bad. It is most commonly used in baking for packaged bread, including
sliced, wrapped, foiled, and other baked goods with yeast baked into them. It is also utilized in
processed meat, whey, and other dairy products. Calcium Propionate extends the typical shelf-
life of bread and baked goods. It also contributes to the nutritional value of each product by
acting as a source of calcium.

Characteristics
CrystalPro Calcium Propionate FCC is a white, crystal, solid substance. It is odorless in its
natural state, but users may detect an odor when the bread is hot; it will disappear once it cools
down. Its pH (10% solution) is 7.5-9.0. It is non-GMO and allergen free. Calcium Propionate
dissolves well and is easy to blend into flour. It is stable under normal conditions and can be
slightly hygroscopic, absorbing moisture easily.
